Recipe for Liver Support

When you are going through a time of hormonal change such as the menopause, it is important that any old hormones are properly processed by your liver so that they can be excreted. One of the key nutrients the liver needs is indole 3 carbinol. Rich food sources of this are cruciferous vegetables (broccoli, cauliflower, Brussels sprouts, bok choi, cress and watercress, cabbage and kale).

This recipe is a delicious way to eat broccoli for lunch and it can be made ahead and kept for 2-3 days.

 

Broccoli Salad (Serves 4)

Ingredients

5 cups fresh broccoli florets

⅓ cup sultanas

½  cup sunflower seeds

¼  cup of red onion, chopped

1 cup of cooked frozen peas, cooled (optional)

Dressing

½ cup low fat, mayonnaise

1 tbsp white wine vinegar

½ tsp sugar

 

Method

Mix all the ingredients for the dressing together and put all the other ingredients in a bowl. Pour on the dressing and stir to coat all the ingredients with the dressing.
